Everything we do at Le Barthélemy Hotel & Spa is influenced by a deep respect and love for our island home, St. Barts. Since opening our doors in 2016, sharing its singular beauty and vibrant culture has been both our sincere pleasure and privilege.
We know that to be part of this community is to care for this community, which is why we strive toward sustainability in every way, tackling the preservation and protection of the environment. Our philosophy supports, among other things, the associations that work for the conservation of our precious bay and its ecosystem. For instance, during the 2022 charity gala in favor of UNICEF, the rent collected for hosting the event on our land was entirely donated to two committed local associations: Coral Restoration and Island Nature Experiences.

In addition, we’ve supported Earth Month every year. In 2022, a portion of each booking at our hotel was donated to the Environmental Territorial Agency (ATE) to help with sea turtle preservation, protection and maintenance of the Grand Cul de Sac's turtle nursery.
We firmly believe that a greener, kinder, more human future is in store, as long as all of us put a little bit of effort into it. And at Le Barth, we have put in a lot of effort. Here’s how we’re working toward a better future right now.

Low-Impact Architecture
Part of the Nature Reserve of Saint-Barthélemy, Le Barth was built and then rebuilt following Hurricane Irma, to celebrate the natural beauty of St. Barts. We’re the place neighbors can count on. Le Barth has served as the host training location for the island's firefighters; we’ve had the Red Cross to lunch to thank them for their commitment to the island; held nature and environmental stewardship classes for local school children ; and feted local artists of the annual St. Barth Music Festival in grand style. We are part of the local community.

Our Story is the Story of St. Barth
Sustainability is about appreciating and preserving the fabric of a culture, its art, beauty, customs, flora and fauna. We demonstrate our respect for the culture and the history of St. Barth in many ways from the architectural design choices we make to the treasures that we hope will become memories in our gift shop. These details are the fabric of our history, of how we are part of St. Barth’s sustainability story.

The roof and framework are part of the island's atypical architectural principles , as the wall in the wellness area, which is a reproduction of the low walls of the island. In the room, we designed on the walls the latanier tree, used in St Barths for making hats. The embroidered cushion is a reminder of the frame of St Barths houses. The roof and framework of the hotel are reminiscent of the island’s traditional architectural style. Waste Not, Want Not
Water is a precious everywhere in the world and we respect this vital resource. It’s why we capture “gray water,” water from sinks, showers and bathtubs in our depuration station and use the filtered water for watering plants in the gardens. We also use mulch on plants to limit the amount of water required to keep our gardens lush, green and inviting. Everyone can do more with less.

One of the most important decisions we made when Le Barthélemy opened was the one for you to sleep in supreme comfort on sheets made of traceable organically grown cotton. A small detail perhaps, but in protecting the places we love, every decision matters. Including yours. Our Approach to Dining
Our responsibility to living our sustainability values is perhaps best expressed at Amis St. Barth, our full-service restaurant that is on a journey towards the goal of zero waste. Amis sources local produce and shops daily, utilizes every bit from pit to peel and composts. We also recognize the journey of our guests who are consuming fewer animal products and offer both vegan and vegetarian menus.
With Amis St. Barth’s opening in October 2021, we’ve acquired new, innovative cuisine equipment to save more energy in gas and electricity while cooking. We also have selective storing.
Whenever possible, Le Barthelemy partners with local farmers and fishers to procure and serve local fruits, vegetables and seafood. Not only does this approach aid the local economy, but it ensures that our guests enjoy the freshest foods, including fish fresh from the Bay such as local Mahi-Mahi where every bit of the fish is used including the roe to make our delicious tarama.

A Zero Waste Philosophy
At Amis St. Barth’s we’re supremely focused on creating a more eco responsible restaurant.
Several actions have been instituted over the past five years including:
We’re moving toward a zero-waste cooking philosophy by limiting food waste: vegetable peels and meat trimmings are reused to make juices, sauces or meat balls
- All waste is part of selective sorting
- We respect product seasonality
- All our fish comes from local responsible fishing according to the St Barth’s fishing rules
- We reuse beach towels to mop the floor after each service
- We provide staff with reusable water bottles to limit single-use plastic
- Amis St. Barth’s to-go bags are exclusively made of reusable materials
- Amis St. Barth’s promotion is exclusively digital to limit paper waste
We continue to commit ourselves to more ethical, local and sustainable values working on new initiatives, such as:
- Full plastic reduction in the kitchen limiting vacuum bags, piping bags and food thread
- Limiting products and purchases delivered by plane
- Installing low consuming energy and water equipment
- Training our staff to raise awareness on ethical and sustainability practices

We Put Money Where Our Heart Is
Sometimes the most effective way to make a sustainable difference is through the purse, which is why over the years, Le Barthélemy Hotel & Spa has made financial donations to organizations doing incredible work inlcuding Coral Restoration of St Barts, that is committed to coral restoration, the Red Cross and the Association Sportive et Culturelle (ASCO) for their efforts to preserve the unique culture of St. Barth, l'Agence Territoriale Environnementale to help with local sea turtle preservation, protection and the maintenance of Grand Cul de Sac's turtle nursery.

Mindful Events
Our Story is the Story of St. Barth
Sustainability is about appreciating and preserving the fabric of a culture, its art, beauty, customs, flora and fauna. We demonstrate our respect for the culture and the history of St. Barth in many ways from the architectural design choices we make to the treasures that we hope will become memories in our gift shop. These details are the fabric of our history, of how we are part of St. Barth’s sustainability story.

Careful Framework
The roof and framework are part of the island's atypical architectural principles , as the wall in the wellness area, which is a reproduction of the low walls of the island. In the room, we designed on the walls the latanier tree, used in St Barths for making hats. The embroidered cushion is a reminder of the frame of St Barths houses. The roof and framework of the hotel are reminiscent of the island’s traditional architectural style. In the rooms, we’ve designed the walls to look like the latanier tree, which are used in St. Barths for making hats. The cushions are also embroidered to look like the local homes on the island.

Raising Awareness
Stuffed toy turtles are available to our smallest guests, and while it may seem a small detail, we think sparking memories of their days at Le Barth swimming in the bay and meeting local turtle friends is how seeds of appreciation for local animal life are sown.

In Room Commitment
One of the most important decisions we made when Le Barthélemy opened was the one for you to sleep in supreme comfort on sheets made of traceable organically grown cotton. A small detail perhaps, but in protecting the places we love, every decision matters. Including yours. Following a thorough and honest communication with you, our treasured guests, we are proud to report that Le Barth has reduced laundry water use by 20% between 2016 and 2021.
-
Ethical Gifts
Another of our decisions when opening was to offer you sustainable quality. Each of our In-room gifts are recyclable and eco-responsible, with 60% of all in-room amenities procured from ethical and environmentally friendly labels. We have burlap bags and recyclable, 100% compostable packaging.

At Amis St. Barth’s we’re supremely focused on creating a more eco responsible restaurant.
